Cinnamon Sugar Popcorn
Preparation time: 15 minutes (+baking and cooling time)
Makes: 10-11 cups
½ cup popping corn
75 g butter (melted)
1/4 cup caster sugar
1 tbsp ground cinnamon (heapful)
Thinly coat the bottom of a large pot with sunflower oil. Pour in the popping corn kernels.
Cover with a tightly fitting lid. Cook over medium-heat occasionally shaking the pot. When the kernels start popping shake the pot continuously. When the popping slows down and the pot starts to fill turn off the heat and leave the pot covered until all the popping has stopped.
Cover 2 baking pans with baking paper. Transfer the popped corn onto baking pan(s) covered with baking sheets.
Preheat the oven to 150 C. Melt the butter. In a small bowl mix the sugar with the cinnamon. Sprinkle the butter over the popcorn. Gently mix the popcorn. Sprinkle the cinnamon-sugar over the popcorn. Gently mix again. Bake in the oven for 30 minutes.
Gently mix the popcorn half way through the baking. If the cinnamon-sugar mix has sunk under the popcorn lift it on top of the popcorn with a spatula.
