Easy Summer Dinner: Halloumi Salad with Grapes

Hallumi and Grape Salad 1 marthafied Halloumi Salad with Grapes is one of my favorite summer dinners. It’s super easy and fast to make and it tastes delicious. Halloumi (or Cypriot Halloumi) itself is a quite substantial cheese, so you don’t need much else to make a fulfilling meal. Just a little bit of your favorite salad, handful of grapes and grilled halloumi topped with a drizzle of the world’s best tasting olive oil (take my word for it) Carluccio’s Olio Al Limone (olive oil with crushed lemons) plus another drizzle of my favorite balsamic vinegar – Carluccio’s Aceto Balsamico di Modena. And voila, you have the perfect summer lunch or light dinner. So easy and fast to make that you don’t even have to sweat, but instead you can calmly enjoy the summer evening with that ice-cold glass of white wine. Did I mention that the Halloumi Salad with Grapes tastes pretty good with white wine!

Halloumi Salad with Grapes

Preparation time: 15 minutes
Serves: 2

Ingredients:
250 g Cypriot Halloumi Cheese
2 Handfuls of Grapes
2 Large Handfuls of Salad (baby leaf and rocket)
Olive Oil or Carluccio’s Olio Al Limone (Olive Oil with Crushed Lemons)
Balsamic Vinegar (Carluccio’s Aceto Balsamico di Modena)

Preparation:
Slice the halloumi into slices (around 10-12 slices from 250 g of halloumi). Wash and halve the grapes (handful of grapes per salad).

Grill or pan-fry the halloumi slices on both sides until golden brown. You can also barbeque halloumi.

Put a large handful of salad onto each plate.

Top the salad with handful of halved grapes.

Divide the halloumi slices between the two plates and place them on top of the salad. Drizzle with olive oil and balsamic vinegar. Serve immediately.

  • Balsamic Vinegar (Carluccio’s Aceto Balsamico di Modena)
